El Salvador Cafe Pacas Finca La Esperanza Pacamara plus Washed + Anaerobic fermentation

Pacamara Plus is planted at 1,400 masl in this beautiful farm: Finca La Esperanza.
This varietal was created in El Salvador and it is a hybrid between the Pacas and the Maragogype varietal. The Pacas is responsible for providing productivity, resistance and a good root system to the plant, while Maragogype is responsible for it’s exotic flavors.

ANAEROBIC PROCESS

After the cherries were harvested, they were fermented as natural in plastic barrels for 45 hours. They added water to the barrels and let the cherries stay there for 24 more hours. The cherries were slowly dried under shade for 14 days.
This process enhanced this coffee’s sweet and intense aroma, creamy body and spices. Cupping notes that remind you of chocolate, orange citrus, and an aftertaste like molasses.
